Past/Port Dining is our South-East Asian restaurant two levels up at The Waterside Hotel, our biggest pub redevelopment yet. Led by Executive Chef Sarah Chan, the menu is built on her Sarawakian roots and years across Malaysia, Singapore, Thailand, Vietnam and Indonesia, including a laksa so personal it only shows up at lunch.
We are looking for an experienced Chef to join the team.Working closely with our senior kitchen team, you’ll play an important role in running service, maintaining consistency and supporting the development of the wider brigade.You'll run service, hold the line on consistency, and help shape the next generation of the brigade. This is hands-on: cooking, running the pass, planning prep, feeding into menu development, and mentoring junior chefs.
This is a hands-on role. You’ll be cooking, running the pass when required, planning and managing prep, contributing to menu development and helping train and mentor junior chefs and cooks. You'll also support the operational side — ordering, stock, food and labour costs, wastage, HACCP and WHS — and work closely with FOH and Events so service runs well from both sides of the pass.
What You Bring

Certificate IV in Commercial Cookery or higher
3–5 years in a high-volume commercial kitchen
Proven senior chef or supervisory experience
An eye for consistency, presentation and efficiency
A track record training and mentoring junior staff
A solid understanding of WHS, food safety and HACCP requirements
Confidence owning portion control, stock and cost management
Reliable, organised and comfortable working in a busy kitchen
