The Royal Geelong Yacht Club (RGYC) is one of Australia's premier yacht clubs, proudly serving members and the public. Boasting a rich history dating back to 1859.
Located in a stunning waterfront position on Corio Bay, The Club hosts an exciting calendar of major events, including the Festival of Sails, and numerous National and World Sailing Championships.
In addition to our renowned sailing events, RGYC delivers a diverse range of hospitality offerings, including dining, functions, events, private celebrations, and day-to-day café and bistro service.
Our hospitality operations are seeking an experienced and motivated Chef de Partie to join our team. This role would ideally suit a chef looking to take the next step in their career, with the confidence and capability to manage kitchen service independently when required while supporting the Head Chef and Sous Chef across our café, bistro, functions, and events operations.

About the Role
Reporting directly to the Head Chef, you will play an important role in delivering high-quality food across our café, bistro, functions, and events operations.
This is a full-time position, working 10 days per fortnight. The Club's café and bistro operate daily from 9:00am to 3:00pm, with bistro dining on Wednesday and Friday evenings. Currently our kitchen operates seven days a week, flexibility in availability is essential.

Key Responsibilities
Prepare, cook, and present food to a consistently high standard.
Complete daily mise en place and service requirements.
Ensure food is delivered efficiently and professionally during service.
Run kitchen service independently when required.
Take ownership of day-to-day kitchen operations during allocated shifts.
Maintain food quality, presentation, cleanliness, and service standards in the absence of the Head Chef.
Assist with menu planning and seasonal menu development.
Support the execution of functions, events, and member dining services.
Enforce food safety, hygiene, and HACCP compliance standards.
Ensure correct food storage, labelling, and temperature monitoring procedures are followed.
Maintain a clean, organised, and safe kitchen environment.
Monitor stock levels and assist with ordering and inventory control.
Receive deliveries and ensure stock is rotated and stored correctly.
Assist with kitchen administration and operational planning as required.
Support and mentor junior kitchen staff.
Work collaboratively with the broader hospitality team.
Follow the direction of the Head Chef/Sous chef and contribute positively to kitchen culture.
About You
You are a confident and capable Chef de Partie who takes pride in producing quality food and delivering exceptional guest experiences. You are comfortable taking responsibility for service and can confidently run the kitchen independently when required.
You will possess:
Minimum 3 years' experience in a commercial kitchen.
Previous experience as a Chef de Partie or experienced Demi chef or Senior Commis Chef ready to step up.
Ability to confidently manage and run kitchen service independently.
Strong understanding of food preparation, cooking techniques, and kitchen operations.
Demonstrated knowledge of food safety, sanitation, and HACCP requirements.
Experience with stock control, ordering, and inventory management.
Strong organisational and time-management skills.
Ability to work calmly and efficiently in a fast-paced environment.
Excellent communication and interpersonal skills.
