Canberra Hawkers Pty Ltd is seeking an experienced and passionate Head Chef to lead our culinary operations in Canberra, ACT. This is a full-time position based at our location in Canberra ACT 2600. As Head Chef, you will be at the forefront of our kitchen operations, responsible for creating exceptional dining experiences through innovative menu development, meticulous food preparation, and the leadership of our culinary team. This role is pivotal to maintaining our reputation for quality cuisine and ensuring that every dish that leaves our kitchen meets our exacting standards. You will need to be comfortable with cooking Asian cuisine!

Key responsibilities

• Oversee all aspects of kitchen operations, including food preparation, cooking, plating and presentation of dishes
• Develop, plan and execute creative menus that showcase culinary excellence whilst meeting business objectives and customer preferences
• Lead, train, mentor and manage kitchen staff, fostering a culture of professionalism, safety and continuous improvement
• Maintain rigorous standards of food safety, hygiene and sanitation in compliance with all relevant regulations and legislation
• Control food costs and manage inventory, ensuring efficient use of resources and minimising waste
• Collaborate with management to establish pricing strategies and monitor profitability of menu items
• Ensure consistent quality and presentation of all dishes across all service periods
• Maintain kitchen equipment and liaise with suppliers regarding stock orders and delivery schedules
• Create a positive and motivating work environment whilst upholding high standards of discipline and accountability
• Respond to customer feedback and adapt operations to enhance the dining experience

What we're looking for

• Formal culinary qualification or extensive practical experience in a professional kitchen environment
• Proven experience working as a Head Chef or Senior Chef in a busy hospitality setting
• Comprehensive knowledge of food safety regulations, health codes and kitchen hygiene standards
• Strong leadership and people management skills with the ability to motivate and develop team members
• Excellent organisational and time management abilities, particularly during high-volume service periods
• Creative flair and passion for menu development and food innovation
• Proficiency in food cost control and inventory management
• Knowledge of diverse cuisines and cooking techniques
• Ability to work under pressure whilst maintaining attention to detail and quality standards
• Strong communication skills and the ability to work collaboratively with front-of-house and management teams
