Head Chefs - FIFO/DIDO Chefs - FT 14 days on/ 7 days off

SIRROM, is seeking Experienced

Head Chefs who are hands on, can engage, empower and lead our catering team and deliver a successful high quality service to our clients in remote workforce villages across QLD in Mackay & Rockhampton Region.

• Provide breakfast, crib lunch, desserts or dinner service for residents on site (be able to work both night shift and dayshift on a rotating roster)
• Ensure food presentation, product presentation and meal service are to Sirrom standards
• Work within budgeted food costs
• Maintain minimal food wastage
• Prepare and serve meals according to the menu and Sirrom Guidelines in line with client requirements
• Maintain a strict health and hygiene standards and systems in the kitchen

• Must have a minimum 3 years work experience on a remote mine-site village or workforce camps in a similar role
• Bulk catering experience, hands on cooking of bistro & buffet style services with consistency and excellence in food presentation standards across Breakfast, Crib, Dinner and Desserts, catering from 300 to 900 residents.
• Must be "on the tools" Head Chef with the ability to lead and deliver high quality service, food service and preparation methods.
• Experience working in remote locations and cyclic rosters (desirable)
• Ability to lead and deliver high quality service, food service and preparation methods.
• Ability to collaborate with a team environment of Chefs, Kitchen Hands and Dining Room Employees and the ability to empower your team for success.
• Being a supportive mentor and coach to all kitchen staff, including dining room attendants.
• Strong food costing and budgeting control for ordering and stock take control.
• Problem solving skills with ability to remain calm under pressure.
• Ability to enforce a strict health and hygiene standards and systems in the kitchen.
• Display a friendly and considerate disposition, ensuring a harmonious work environment.
• Friendly and considerate attitude to promote a positive work environment.
• Must have a current open driver's license

To be considered, you must have or be willing to obtain:

• Chef Trade Certificate - Australian Trade Qualification (Minimum of Cert IV in Commercial Cookery or higher or Trade qualified with extensive catering management experience)
• Food Safety for Supervisor's Certificate (desirable)
• Proof of current Right to Work in Australia
• National Police Check - no more than 1 month old
• To be able to pass a pre-employment medical and drug screening
• White Card(advantageous)

The successful candidates will have strong experience in a fast-paced Catering operation. If you have proven bulk cooking experience, have fly-in-fly-out/ drive-in-drive out experience and can work well under pressure in a medium size kitchen operation, have a creative flare and genuine passion for food, please apply as we would love to speak with you.

Head Chef Salary from $100,000.00 to $110,000.00 plus super (dependent on experience and village size).
