We specialise in sustainable, high-quality proteins including kangaroo, venison, wild boar and other Australian game meats, with a strong focus on nutrition, innovation, provenance and whole-animal value.

About the role

We are seeking a creative and commercially minded food professional to help develop the next generation of products across our human food and pet nutrition ranges.

This is not a standard product development role. We are looking for someone with strong culinary instincts, technical discipline, and genuine curiosity about what can be achieved with Australian wild and game proteins.

You may be a chef ready to move beyond restaurant hours, a food technologist with a strong palate, or a product developer who understands both flavour and commercial production. What matters most is your ability to turn ideas into products that are practical, scalable and genuinely appealing.

Key areas of focus

You will work across three main areas:

Premium game meat products
Developing value-added products for human consumption, including smallgoods, charcuterie, ready-to-cook and ready-to-eat formats.

Gourmet pet nutrition
Creating high-protein meals, treats and air-dried products based on a whole-food approach.

Whole-animal value creation
Identifying opportunities to maximise the value of each animal through co-products such as bone broth, tallow, collagen and other nutrient-rich formats.

What you will be doing

• Develop new product concepts across human food and pet nutrition ranges.

• Review and improve existing products, recipes and formats.

• Create practical whole-animal workflows from raw material selection through to finished product.

• Trial new flavour profiles, formats and applications suited to Australian game proteins.

• Develop and refine value-added products using trim, bones, fats and other co-products.

• Work with suppliers, ingredient partners and flavour houses to bring concepts to life.

• Document recipes, trials, specifications and production requirements clearly enough for scale-up.

• Work closely with production, quality and commercial teams to ensure new products are safe, viable and market ready.

About you

We are looking for someone who brings a combination of creativity, technical understanding and practical discipline.

You may have experience as a chef, product developer, food technologist, butcher, smallgoods specialist or innovation lead. Experience with game meats, native proteins, pet nutrition or high-protein food formats would be highly regarded.

You will ideally bring:

• Strong culinary skills and a well-developed palate.

• Experience developing food products from concept through to trial or production.

• Knowledge of meat, game, smallgoods, charcuterie, ready meals or pet nutrition.

• An understanding of food safety, including HACCP, FSANZ requirements and relevant regulatory standards.

• The ability to assess flavour, texture, format and consumer appeal.

• Practical documentation skills for recipes, specifications and production trials.

• A hands-on approach and willingness to work closely with production teams.

• Curiosity, initiative and the ability to turn unusual raw materials into commercially useful products.
