About the role

Marmont is a Californian-inspired restaurant and late-night venue on the Crown Promenade, drawing on the energy and diversity of Los Angeles and Southern California. As Restaurant Manager, you'll own the full front-of-house experience, moving effortlessly between refined dining service and a buzzing, high-volume bar, and take genuine pride in the growth of the people around you.

You'll report to the Assistant General Manager and lead a front-of-house team of 30+.

Key responsibilities

• Mentor a front-of-house team of 30+, building a culture of excellence and visible growth

• Oversee daily operations across dining and bar, delivering a seamless casual-refined dining experience every shift

• Handle complex floor planning, reservations optimisation, and high-volume event execution

• Report on venue performance, manage inventory, and drive operational improvements with the leadership team

• Implement a training culture from day one, with visible, measurable growth in your team

About you

• 2+ years in a senior hospitality management role, with a track record in high-volume, premium environments

• Current RSA and full working rights in Australia

• Confident across POS and reservations systems, with a good handle on rostering management

• Available to work a rotating roster including evenings, weekends, and late nights

• Ability to read a room instinctively, knowing when to step in, when to step back, and how to coach in the moment without disrupting the floor

• High standards, and an understanding that the best service is often felt rather than seen

• Hands-on and solutions-focused, with genuine investment in the people on your team
