Assistant Restaurant Manager | The Butler, Potts Point

The Butler is a contemporary Mexican restaurant located in the heart of Potts Point, blending neighbourhood sophistication with the vibrant flavours of Polanco. The sun-drenched terrace with lush greenery offers views of Sydney’s iconic skyline, making it the perfect destination to host events.

Key duties & responsibilities...

• Lead, inspire and roster FOH teams to deliver standout guest experiences across every service
• Own the floor — from section allocations and reservations to waitlists and keeping service running seamlessly
• Coach and develop your team in Applejack’s service style, from sequence of service and table touches to upselling and turning guest moments around
• Keep a close eye on the numbers, managing labour to budget and using P&L and service KPIs to drive performance
• Champion responsible service and safety, ensuring RSA/RSF, incident reporting and venue protocols are always on point
• Set the venue up for success, taking ownership of opening and closing procedures, cash-ups, POS and end-of-day processes to ensure every service starts and finishes strong

We'd love for you to bring...

• Minimum 2–3 years’ recent leadership experience in a premium/high-volume restaurant or bar
• Working knowledge of labour planning, budgets, stock and POS systems
• Strong wine/spirits and food knowledge with confident, guest-facing communication
• Current NSW RSA (or ability to obtain before start)
• Availability to work a rotating roster incl. nights/weekends/public holidays
