Sous Chef wanted for Jimmy O Neill's Whiskey and Alehouse

About the role

Busy Irish bar in St Kilda, looking for a Sous chef to make that next step in their career for this prime location on Acland in St Kilda. Jimmy O Neill's is a modern twist on the Irish pub mixing some modern food with some of the more traditional Irish Fare. The emphasis will be on fresh food & local produce. We are a busy venue with room for expansion.

Key responsibilities

• Demonstrate passion about food & good knowledge of local food trends as well as some knowledge of traditional Irish/European cuisine

• Demonstrate competency in menu writing & creation

• Maintain good knowledge of kitchen hygiene & HACCP requirements

• Demonstrate good knowledge of kitchen budgeting

We also operate a catering business so you may be required to work offsite at large events if required. The following daily tasks must also be done.

• Study each recipe and gather all necessary ingredients

• Social media content

• Inform wait staff about daily specials

• Ensure appealing plate presentation

• Supervise Cooks and assist as needed

• Slightly modify recipes to meet customers' needs and requests (e.g. reduce salt, remove dairy)

• Monitor food stock and place orders

• Check freshness of food and discard out-of-date items

• Experiment with recipes and suggest new ingredients
