About the role

Chai Biryani Dosa (CBD) is seeking experienced Chefs to join the team in Werribee, VIC. The role focuses on preparing and cooking Indian dishes to the restaurant's established recipes and standards, with a focus on Hyderabadi Dum biryani, Tandoor items and South Indian tiffins.

Key responsibilities

• Prepare and cook Indian dishes to the restaurant's established recipes and standards, with a focus on Hyderabadi Dum biryani, Tandoor items and South Indian tiffins
• Examine foodstuffs on delivery to ensure quality and report any shortfalls
• Regulate temperature of ovens, tandoor, grills and other cooking equipment
• Season food during cooking according to recipes and personal judgement and experience
• Portion food, plate dishes and add gravies, sauces, raita and garnishes to specification
• Store food in temperature-controlled facilities and maintain correct stock rotation
• Prepare dishes for customers with food allergies or intolerances
• Assist in estimating daily food requirements and preparing mise en place accordingly
• Inspect food preparation and serving areas to ensure observance of safe, sanitary food-handling practices
• Maintain a clean and tidy work environment, observing council regulations for food handling and storage at all times

About you

• Trade certificate qualified Chef with at least 1 years' relevant experience, including time in a Chef, Sous Chef or equivalent role
• Demonstrated command of Hyderabadi dum biryani, south Indian tiffins and cuisine— technique, not just familiarity
• Tandoor and South Indian tiffin experience
• Proven ability to manage food cost, ordering and portion control
• Experience scheduling, supervising and training kitchen staff
• Current Food Safety Supervisor certificate
• Ability to communicate efficiently and clearly in both written form and in person
• Self motivated and able to take responsibility
• Able to demonstrate initiative and a proactive approach to daily tasks
• Full working rights in Australia, or eligibility for employer sponsorship

• $65,000 – $85,000 + superannuation, depending on experience
