Opening in September 2026, East Pavilion is a brand-new, multi-million-dollar, 220-seat waterfront restaurant within the iconic Shoal Bay Country Club precinct, directly opposite Shoal Bay Beach.

Inspired by the port cities and coastlines of Asia, East Pavilion will showcase bold, generous Chinese cooking, premium produce and genuine hospitality in an exceptional coastal setting.

We’re looking for an experienced and passionate Sommelier to join our opening team and help shape an outstanding wine experience from day one.

About the Role

Working closely with the Restaurant Manager and Head Chef, you’ll be responsible for delivering knowledgeable, engaging wine service and helping build our wine program.

Key responsibilities:

• Deliver professional wine service and confidently recommend wines to guests

• Create thoughtful wine pairings to complement the menu

• Maintain strong knowledge of wines, spirits and premium beverages

• Assist with the wine program, cellar and stock

• Support the restaurant team to deliver exceptional service

About You

• Previous experience as a Sommelier or senior restaurant service role with strong wine knowledge

• WSET, CMS or equivalent qualifications highly regarded

• Current NSW RSA

• Exceptional communication skills and genuine passion for hospitality

• Availability to work evenings, weekends and public holidays
