Bistro X at The StandardX Melbourne is a modern neighbourhood bistro in the heart of Fitzroy — relaxed, design-led, and rooted in Melbourne’s food culture. Described as “a little European, a lot Fitzroy,” the venue combines classic bistro technique with a contemporary Melbourne edge, focusing on hyper-seasonal Victorian produce, approachable dining, and warm hospitality.

Led by Executive Chef Ben John and a team of Melbourne hospitality professionals, Bistro X offers an all-day dining experience spanning breakfast, brunch, wine, cocktails, and dinner service. The atmosphere is casual yet refined, designed as a welcoming local hangout for food lovers, wine drinkers, creatives, and hotel guests alike.

Responsibilities

• Showcase your food and beverage knowledge to deliver exceptional, attentive wining and dining experiences for our guests

• Confidently manage a dining/bar section with professionalism and pace OR work your coffee magic to provide exceptional barista services to the breakfast/lunch team.

• Focus on guest engagement and upselling opportunities

• Be on the floor, in full uniform, well-groomed and ready for service at the start of your shift.

• Prepare the floor and stations for service, following the established checklists.

• Have a strong knowledge and understanding of all food and beverage menus.

• Be aware of any specials on the menu, as well as any specific daily briefing points

Experience, Qualifications & Skills

• Food and Beverage waiting/bar experience in a quality or fine dining environment OR Barista experience in a high volume quality environment

• Have a passion for delivering exceptional dining experiences and know it’s so much more than just a plated dish or a drink in a glass!

• Impeccable grooming and presentation.

• And most importantly – possess a great, energetic work ethic and a vision and passion to build a fantastic team environment.
