Situated in Wunderlich Lane precinct, Vitelli’s Upstairs takes its cues from old New York red-sauce joints — the kind of place that feels both lived-in and considered. Pasta is made fresh every day by the Grana team, and that’s the heart of it. Around that, you’ll find Italian-American classics, lighter plates, and desserts that always sound like a good idea once they’re on the table. As the evening moves on, the bar comes into focus — Italian cocktails done properly, amaro on hand, and a late-night menu for when guests aren’t ready to call it.

About the Role

We are seeking an experienced and driven Restaurant Manager to lead Vitelli’s Upstairs. This is an opportunity for a passionate hospitality professional to take ownership of a venue that’s already turning heads — and take it further.

As Restaurant Manager, you will be responsible for the overall success of the venue; leading service, developing people, driving financial performance, and ensuring operational excellence across all areas.

Key Responsibilities

• Lead all day-to-day venue operations, ensuring smooth and professional service across every shift — from first covers through to late night.
• Recruit, develop, mentor, and inspire a high-performing team culture centred on accountability, energy, and genuine care.
• Deliver exceptional guest experiences and confidently manage service recovery when required.
• Drive revenue, profitability, and overall venue performance through strong commercial leadership.
• Manage rosters, wages, and labour costs in line with budget and business targets.
• Monitor guest feedback and operational results to identify and act on improvement opportunities.
• Maintain the premium presentation standards, atmosphere, and attention to detail that define Vitelli’s Upstairs.
• Ensure compliance with RSA, WHS, food safety, and all relevant company policies and legislation.

We’d Love to Hear From You If You Have

• Previous experience in a Restaurant Manager or senior management role within a fast-paced, high-volume hospitality environment.
• Proven ability to lead teams and create a positive, high-performance culture.
• Strong commercial acumen with experience managing labour, costs, and revenue targets.
• A hands-on leadership style with confidence leading from the floor.
• Exceptional communication and people skills.
• Strong organisational skills and confidence using rostering, POS, and reporting systems.
• Flexibility to work evenings, weekends, and public holidays as required.
• A genuine passion for hospitality, Italian food and wine, and creating memorable guest experiences.
