Commis Chef

About the role

Redcliffe Leagues Club (Dolphins) is seeking a Commis Chef to join the team. With a range of food outlets, including Koopa Cafe, On The Green, Bistro forty20, 8 function rooms, Dolphins NRL catering and a 10,000-seat KAYO Stadium, supported by over 50,000 Dolphin members, this is an opportunity to be part of a dynamic and thriving environment.

Key responsibilities

• Contribute to the kitchen operations, including food preparation, presentation and occasional menu input
• Assist the Executive Chef, Head Chef and Chef de Partie with all culinary requirements, while fostering a positive and collaborative work environment
• Maintain consistent food standards and cleaning/hygiene routines
• Mise en place, cooking and plating for catering functions
• Assist the wider catering team in maintaining catering techniques and procedures, food safety regulations and workplace health and safety

About you

• Proven experience in the operation of a professional kitchen operation in a Club environment
• Certificate IV in commercial cookery
• Proven experience as a qualified Cook or Chef
• Extensive knowledge of general and specialised food preparation techniques and procedures
• Sound knowledge of the latest cooking trends and techniques
• Sound knowledge of stock management procedures
• Driven and passionate culinary professional
