Manky Sally's, Moo Brew's Salamanca taphouse, is one of Hobart's quirkiest and most welcoming venues. We sling world-class Moo Brew beers alongside innovative, Asian-inspired, flavour-packed food, built on sustainably sourced local produce and a standing challenge to our chefs to think past the obvious.

We're after an exceptional Head Chef to lead the kitchen. You'll design seasonal menus, run high-quality service, and build a kitchen team that people want to be part of. The job also comes with something the industry doesn't hand out often, which is a life outside it. As a tourist hotspot we trade seven days a week through peak season (November to March) and five days in the quieter months (April to October).

The Gig

• Design the menu alongside the Venue Manager, seasonal and built around what Tasmania grows, catches and makes.
• Run service at a consistently high standard, with strict adherence to WHS and food hygiene regulations.
• Lead the team. Roster, mentor and develop your chefs, manage timesheets, and set the tone across service and prep.
• Own the numbers. Ordering, stock management and supplier relationships, with food cost, wastage and spoilage kept tight.
• Keep the kitchen sharp. Presentation, cleaning standards and asset management, as a senior member of the venue team.

• Demonstrated leadership of a kitchen team, including rostering, mentoring and holding a standard (essential)
• A creative, confident cooking style and genuine care for quality produce (essential)
• Strong food safety and hygiene practice (essential)
• Organised and calm under pressure, and able to adapt to seasonal seven-day trading (essential)
• Right to work in Australia on an ongoing basis (essential)
• Head Chef or Sous Chef experience in a comparable high-volume venue (highly desirable)
• Confidence with food costing, stock control and supplier negotiation (highly desirable)
• Experience with Asian-inspired or similarly flavour-forward menus (desirable)
